One of the hardest things about backpacking is making sure that you are eating well. And getting enough calories to keep trekking. This bread recipe is a welcome addition to that or any outdoor excursion you have planned!
Both recipes today (Gluten free and the traditional recipe) will give you about 16 servings. As a note, We calculated the Nutritional Facts to the best of my ability so please take it at face value.
Traditional Recipe:
- 4 C Whole Wheat Flour
- 1 1/4 C Water
- 3/4 C Brown Sugar
- 1/3 C Honey
- 1/3 C Wheat Germ
- 1/3 C Oil
- 1/4 C Sesame Seeds
- 1/4 C Molasses
- 3 Tbsp Nonfat Dry Milk Powder
- 1 1/2 tsp Salt
Gluten-Free Alternative:
- 4 C Gluten Free Flour Mix, I used Krusteaz
- 1 1/4 C Water
- 3/4 C Brown Sugar
- 1/3 C Honey
- 1/3 C Ground Sun Flower Seeds
- 1/3 C Oil
- 1/4 C Sesame Seeds
- 1/4 C Molasses
- 3 Tbsp. Nonfat Dry Milk Powder (Carnation)
- 1 1/2 tsp Salt
Mix all ingredients until smooth. This batter will be stiff and a bit hard to work with. Pour into a well-greased 8×8 baking pan. Bake in a preheated oven set at 300 °F for about one hour. The bread is done when it starts to pull away from the pan.
Once cooled, cut into squares and let it stand overnight, uncovered to dry. Pack into individual bags or a container for easy transport. This dense bread will keep for weeks.
